Snow Day Pea Soup

Earlier this week, it snowed. Quite a bit, and so they closed the office where I work. Several months ago, I told my stepkid I would try to make pea soup sometime. I have never made split pea soup from scratch before but it seemed easy, and guess what: It is!

I don’t have a picture to show you because we’ve eaten it all up by now because it was so. Totally. Yummy. But here is the recipe so you can make it and see for yourself.

1 bag (16 oz) Split Peas
1 large potato, diced
1 1/2 cup chopped yellow onion
2 cups chopped celery
2 cups chopped carrots
6 1/2 cups water
6 heaping tsps Better Than Bouillon No Chicken Base
2 tsp minced garlic
2 tbsp parsley flakes
1 bay leaf
salt and pepper to taste (about 1/2 tsp to 1 tsp each)

Put all ingredients in crock pot. Stir. Cook on high for 2 hours, stirring a couple times inbetween. Reduce to low for 4-5 more hours, again stirring periodically. After about 3.5 hours on low, whisk the soup to break up ingredients, and mash some of it against the side of the crock pot with a wooden or plastic spoon to help thicken the soup. Remove the bay leaf before serving, and add salt and/or pepper as desired. Serve with buttered bread (I use Earth Balance Buttery sticks).
